Sausage Balls:
1 pound sausage hot or mild, 2 cups grated sharp cheddar cheese, 3 cups bisquick.
Combine all ingredients and shape into balls the size of walnuts.
Bake on papered sheet pan at 300 degrees F. in the convection oven for 15 minutes. Turn after pan 7
minutes.
NOTE: defrost and reheat at 350 degrees F.
Sausage Cheese Balls:
3 cups bisquick, 1 pound sausage, 4 cups shredded cheese, 1/2 cup grated parmesan cheese, 1/2 cup milk,
1/2 tsp. rosemary leaves, 1/2 tsp. parsley flakes.
Heat oven to 350. Lightly grease bottom & sides of Jelly Roll pan, 15 1/2 x 10 1/2 x 2 x 1 inch. Stir together all
ingrediants. Shape into 1" balls. Place in pan. Bake 20-25 minute until brown. Immediatly remove from pan.
Serve w/ sauce-BBQ or Chili (they are great served plain as well). Makes 30-40 balls.
Sausage Rolls:
2 (8 ounce) packages crescent roll dough, 2 pounds uncooked sausage, 2 cups shredded mozarella
cheese, 2 bunches chopped green onions.
Preheat oven to 350º. Unroll crescent roll dough on floured board or counter. Press seams together.
Layer dough with uncooked sausage, cheese, and green onions. Add black pepper to taste if desired.
Roll dough jelly-roll fashion, pinch seam to seal. Chill for 10 to 15 minutes. Cut into 1 inch slices.
Place on greased baking sheets and sprinkle each with mozzarella if desired. Bake at 300º for 30 minutes
until sausage is cooked through.
Sausage Stuffed Mushrooms:
12 ounces button mushrooms, 1 pound spicy sausage, 6 ounces softened cream cheese, 1/4 cup green
onioons sliced thinly, 1 Tbs. soy sauce.
Preheat the oven to 350°F. Remove the stems from your mushrooms, and scoop out the brown, feathery
inside of the mushroom to leave a little shell. Place top side down on a cookie sheet - if they want to roll,
just cut a bit off of the top to make it flat so that they won't roll. Fry up the sausage, soften the cream
cheese and chop some green onions. Mix the cream cheese, cooked sausage, chopped green onions and
the soy sauce - place this mixture where your mushroom stems once were and bake in a 350 degree oven
for about 20-30 minutes.
Spicy Tortilla Chips:
2 Tbs. melted butter, 1/2 tsp. chili powder, 8 corn tortillas 6 inches in diameter.
Heat oven to 400ºF. Stir together butter and chili powder; brush on one side of tortillas. Cut each into 12
wedges. Place in ungreased jelly roll pan, 15 1/2x10 1/2x1 inch. Bake uncovered 8 to 10 minutes or until
crisp and golden brown; cool. (Tortillas will continue to crisp as they cool).
Stuffed Crust Pepperoni Pizza:
10 ounces refrigerated pizza dough, 7 pieces mozarella string cheese, 1/2 cup pizza sauce, 20 slices
pepperoni, 1 cup shredded mozarella cheese, 2 Tbs. melted butter, parmesan cheese.
Heat oven to 425*. Grease 13x9x2 inch pan. Unroll dough and press in bottom and 1 inch up sides of
greased pan. Place pieces of string cheese along the inside edges of dough. Fold the 1 inch of dough over
and around the cheese; press dough edges to seal. Brush edge with melted butter and parmesan cheese.
Top the crust with sauce, pepperoni and cheese. Bake at 425* for 15 to 18 minutes or until crust is golden
brown and cheese is melted.
Stuffed Bacon Rolls:
1/2 cup butter, 3-4 Tbs. minced onion, 1 (6 ounce) container stove top chicken flavor stuffing mix, 1 egg well
beaten, milk, 1 pound bacon.
Preheat oven to 450 degrees. Saute 1 stick of butter and the minced onion until the onion is translucent.
Stir in the canister of Chicken stuffing mix, remove from heat. To the well beaten egg, add enough milk to
measure 1 cup. Add this liquid to the stuffing mix and blend by hand. Allow to cool. Cut bacon strips into
thirds. Take small balls of mix and wrap with bacon. Place in shallow pan seam side down and bake at 450
degrees until the bacon is almost cooked. Approximately 10 to 15 minutes depending on your oven and how
well you like your bacon done.
Quick Pickles:
2 cups sugar, 1 cup vinegar, 1 Tbs. salt, 1 tsp. celery salt, 1 tsp. dill seeds, 8 cups cucumbers sliced but not
peeled, 1 cup sliced onions.
Stir sugar in the vinegar until dissolved. Add salt, celery salt, and dill seed, mixing together. Pour over
cucumbers and onions. Stir and push under liquid. Let stand for 24 hours.
Put in jars and refrigerate. No need to can, just keep in refrigerator. They will keep indefinetely in
refrigerator. NOTE: Even though it seems like you don't have enough liquid at first,in several hours you will
have enough liquid to cover the cucumbers.
Refrigerator Dills:
6 cups water, 1 cup vinegar dark cider, 2 1/2 Tbs. canning salt, 1 head dill, 1 clove garlic, cucumbers.
Put 1 head of dill (or more) and 1 clove garlic in each quart jar.
Or use 1 gallon jar with 5 heads dill and 4 garlic cloves. Add cucumbers whole or sliced, to jar. Pour boiling
solution over cucumbers in jar. Let stand overnight at room temperature. Next morning put lids on jars and
put in refrigerator. Keeps all winter. Solution is exactly enough for 1 gallon jar.
Sausage and Cheese Stuffed Mushrooms:
1 pound mushrooms, 1/4 cup italian dressing, 1/2 cup hot italian sausage cooked and crumbled, 1/2 cup
shredded mozarella cheese.
Remove stems from mushrooms, brush with dressing, broil for 5 minutes. Press sausage evenly into each
cap. Sprinkle with cheese. Broil for another 5 minutes.
Upside Down Pizza:
1 pound ground chuck, 1 chopped onion, 1 tsp. minced garlic, 1 (16 ounce) jar spaghetti sauce, 2 cups
shredded mozarella cheese divided, 1 cup parmesan cheese divided, 1 (8 ounce) can crescent rolls.
Preheat oven to 350. Brown ground chuck, onion and garlic in large skillet. Drain and stir in spaghetti
sauce. In 9 x 13 dish, spread a layer of sauce and top with half of cheeses. Then spread remaining sauce
and the rest of the cheese. Top with crescent rolls, and pinch seams to form a crust.
Bake 20 to 30 minutes, or until crust is golden brown.
Wonderful Kitchen Sink Scrub That Makes Your Sink Glow:
1/2c. baking soda, 1/8c. vinegar, 5 drops lemon essential oils, 5 drops orange essential oils.
Combine everything in a bowl. Wet a sponge. Dip it in the prepared scrub and scrub away on your dirty sink
that's looking lifeless. Keep for 5 minutes. Wash off with tap water. Wipe dry. Makes enough for 1 cleaning.
